    Prepare the Spaetzle Dough

    In a large bowl, mix together the flour, salt, and nutmeg. In another bowl, whisk together the eggs and milk. Gradually combine the wet and dry ingredients until a thick batter forms. Let it rest for 10 minutes.

    Cook the Spaetzle

    Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the dough into the boiling water. Cook until the spaetzle float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

    Combine with Cheese

    In a large skillet, melt the butter over medium heat. Add the cooked spaetzle and toss to coat. Gradually stir in the Gruyère cheese until melted and creamy. Season with additional salt and pepper to taste.

    Transfer the cheese spaetzle to a serving dish, sprinkle with chopped chives, and serve hot.
