    Prepare the Ribs

    Preheat your oven to 300°F (150°C). Season the short ribs with salt and black pepper on all sides.

    Sear the Ribs

    In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear them for about 3-4 minutes on each side until browned. Remove the ribs and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion and minced garlic. Sauté for about 5 minutes until the onion is translucent.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Let it simmer for about 2 minutes.

    Add Remaining Ingredients

    Stir in the beef broth, soy sauce, brown sugar, bay leaves, and thyme. Mix well.

    Return Ribs to Pot

    Place the seared short ribs back into the pot, making sure they are submerged in the liquid.

    Braise in Oven

    Cover the pot with a lid and transfer it to the preheated oven. Braise for about 3 hours, or until the ribs are tender and falling off the bone.

    Serve

    Remove the pot from the oven, take out the ribs, and let them rest for a few minutes. Serve with the sauce from the pot.
