In a small bowl, combine minced garlic, chopped rosemary, thyme, olive oil, salt, and black pepper to create a marinade.

Marinate the Pork
Rub the marinade all over the pork shoulder, ensuring it is well coated. Let it marinate for at least 4 hours or overnight in the refrigerator for best flavor.

Preheat your oven to 325°F (165°C).

Add the Pork to the Pan
Place the marinated pork shoulder on top of the vegetables in the roasting pan.

Pour the apple cider vinegar over the pork and vegetables, adding a little water if needed to prevent burning.

Cover the roasting pan with aluminum foil and roast in the preheated oven for about 3 hours, or until the internal temperature of the pork reaches 190°F (88°C).
