In a mixing bowl, combine the ground beef, salt, and black pepper. Mix until just combined, then form into two equal-sized patties.

Slice the onion into thin rings. Heat a skillet over medium heat and add a tablespoon of butter. Add the onions and sauté until they are soft and caramelized, about 10 minutes. Remove from the skillet and set aside.

In the same skillet, add the remaining tablespoon of butter. Increase the heat to medium-high and cook the beef patties for about 3-4 minutes on each side, or until they reach your desired doneness. In the last minute of cooking, place a slice of cheddar cheese on each patty to melt.
