Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into small, uniform sticks, about 1/4 inch thick.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

Carefully add the dried potato sticks to the hot oil in batches, frying them for about 4-5 minutes or until golden brown. Avoid overcrowding the pot.
