    Prepare the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until the batter is smooth and well combined.

    Prepare the Fish

    Cut the cod fillets into three equal pieces, each approximately 3 oz. Pat them dry with paper towels.

    Heat the Oil

    In a large, deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of batter into it; if it sizzles and bubbles, the oil is hot enough.

    Batter the Fish

    Dip each piece of cod into the batter, ensuring it is fully coated.

    Fry the Fish

    Carefully place the battered cod pieces in the hot oil. Fry them in batches, if necessary, to avoid overcrowding. Cook for about 4-5 minutes on each side, or until golden brown and crispy.

    Drain and Serve

    Once cooked, remove the fish from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your choice of dipping sauce.
