    Sear the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and season with salt and black pepper. Sear the beef until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and sauté for another minute until fragrant.

    Add Remaining Ingredients

    Return the seared beef to the pot. Add the sliced carrots, diced potatoes, sliced celery, beef broth, tomato paste, bay leaves, and thyme. Stir well to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours or until the beef is tender.

    Season and Serve

    Once the beef is tender, taste and adjust seasoning with salt and black pepper as desired. Remove the bay leaves before serving. Serve hot.
