Preheat the oven to 400°F (200°C). Cut the tomatoes in half and place them on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast for about 20 minutes until soft and slightly charred.

In a small saucepan, heat the cooked black beans over medium heat. Mash them slightly with a fork or potato masher, adding a little water if necessary to reach your desired consistency. Season with salt and pepper to taste.

For poached eggs, bring a pot of water to a gentle simmer, add a splash of vinegar, and create a whirlpool. Crack the eggs into the water and cook for about 3-4 minutes until the whites are set. For scrambled eggs, whisk the eggs in a bowl, season with salt and pepper, and cook in a non-stick skillet over low heat, stirring gently until fluffy.
