    Preheat the oven to 400°F (200°C). Cut the tomatoes in half and place them on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast for about 20 minutes until soft and slightly charred.

    Once the tomatoes are roasted, let them cool slightly. In a bowl, combine the roasted tomatoes, finely chopped red onion, chopped cilantro, and lime juice. Mix well and set aside.
