Cook Quinoa
Rinse the quinoa under cold water. In a pot, combine quinoa and water (or broth) with a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Prepare Lemon-Dill Sauce
In a small bowl, mix together lemon juice, chopped dill, minced garlic, and a pinch of salt and pepper. Set aside.

Cook Salmon
Heat olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and pepper. Once the oil is hot, place the salmon skin-side down in the skillet. Cook for about 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until cooked through and flaky.

Serve
Place a serving of quinoa on each plate, top with a salmon fillet, and drizzle with the lemon-dill sauce. Garnish with additional dill if desired.
