Prepare the Tofu
Drain the firm tofu and press it between paper towels to remove excess moisture. Cut the tofu into bite-sized cubes.

Coat the Tofu
In a bowl, mix cornstarch with salt. Toss the tofu cubes in the cornstarch mixture until they are evenly coated.

Fry the Tofu
Heat vegetable oil in a deep skillet over medium-high heat. Once hot, carefully add the coated tofu cubes in batches, frying until golden brown and crispy. Remove and drain on paper towels.

Prepare the Scallion Tuile
In a blender, combine chopped scallions with a pinch of salt. Blend until smooth. Spread a thin layer onto a baking sheet lined with parchment paper. Bake at 375°F (190°C) for about 10-12 minutes or until crispy. Let it cool and break into shards.

Assemble the Bites
On a serving platter, place the fried tofu bites. Top each with a dollop of red chili jam and sprinkle with crushed wasabi peas. Garnish with scallion tuile shards.
