Prepare the Tomatoes
Slice the green tomatoes into 1/4 to 1/2 inch thick slices. Sprinkle both sides with salt and let sit for about 10 minutes to draw out excess moisture.

Set Up Breading Station
In one bowl, place the all-purpose flour. In another bowl, pour the buttermilk. In a third bowl, combine the cornmeal, salt, and black pepper.

Bread the Tomatoes
Dredge each tomato slice in flour, then dip into the buttermilk, and finally coat with the cornmeal mixture. Make sure each slice is well coated.

Fry the Tomatoes
In a large skillet, heat the oil over medium-high heat. Once hot, carefully add the breaded tomato slices in batches, frying until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Sandwich
Toast the Baker Street sourdough slices if desired. Spread a generous layer of pimento cheese on one slice of bread, add a few fried green tomatoes, top with arugula, and finish with another slice of bread.
