In a large bowl, soak the cut chicken pieces in buttermilk. Cover and refrigerate for at least 2 hours, preferably overnight.

In another bowl, combine the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix well.

Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring it's fully coated. Place the coated chicken on a wire rack and let it rest for 15 minutes.
