    Prepare the Potatoes

    Wash and cut the potatoes into small cubes. In a pot, bring water to a boil and add a pinch of salt. Add the potatoes and boil for 5-7 minutes until slightly tender. Drain and set aside.

    Crispy Potatoes

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the boiled potatoes, season with salt and pepper, and pan-fry until crispy and golden brown, about 10 minutes. Remove from heat and set aside.

    Cook the Bacon

    In the same skillet, add the remaining tablespoon of olive oil and cook the bacon until crispy, about 3-4 minutes per side. Remove from skillet and drain on paper towels.

    Fry the Eggs

    Crack the eggs into the skillet and fry to your desired doneness, around 2-3 minutes for sunny-side up. Season with salt and pepper.

    Assemble the Sandwich

    Toast the baker street bun. Spread mayonnaise on the bottom half, layer with arugula, crispy bacon, fried eggs, and a slice of American cheese. Drizzle sriracha on top, then place the top half of the bun.
