Braised Short Rib Preparation

    Sear the Short Ribs

    Preheat the oven to 325°F (165°C). Season the short ribs with salt and black pepper. In a large oven-safe pot, heat the olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove the ribs and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, carrots, celery, and garlic. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Broth and Wine

    Pour in the beef broth and red wine, scraping the bottom of the pot to deglaze. Add the bay leaves and thyme.

    Braise the Short Ribs

    Return the short ribs to the pot. Bring the mixture to a simmer, cover with a lid, and transfer to the preheated oven. Cook for 3 hours, or until the meat is tender and falling off the bone.

    Prepare Mashed Potatoes and Vegetables

    While the ribs are braising, prepare the mashed potatoes and seasonal vegetables. Boil potatoes until tender, mash with butter and seasoning to taste. Steam or sauté the vegetables until tender.

    Serve

    Once the short ribs are done, remove them from the pot and let them rest for a few minutes. Serve the short ribs over the mashed potatoes, accompanied by the seasonal vegetables.
