Toast the Bread
Toast the sourdough bread slices until golden brown and crispy.

Prepare the Avocado
Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until desired consistency is reached. Add lemon juice, salt, and black pepper to taste.

Prepare the Tomatoes
Halve the cherry tomatoes and set aside.

Assemble the Toast
Spread the mashed avocado evenly over the toasted sourdough. Top with halved cherry tomatoes and crumbled feta cheese.

Drizzle with olive oil and sprinkle with fresh herbs if using. Serve immediately.
