Cottage Cheese Preparation

    Heat the Milk

    In a large pot, heat the milk over medium heat until it reaches 190°F (88°C), stirring occasionally to prevent it from scorching.

    Add Acid

    Once the milk is heated, remove it from the heat and stir in the white vinegar or lemon juice. Allow it to sit for 5-10 minutes until curds form and the whey separates.

    Strain the Curds

    Line a colander with cheesecloth and carefully pour the curds and whey into it. Allow it to drain for about 10 minutes.

    Rinse the Curds

    Rinse the curds under cold water to remove any residual whey and vinegar/lemon flavor. Gather the cheesecloth and gently squeeze to remove excess water.

    Season and Store

    Transfer the curds to a bowl, stir in the salt, and mix well. Store the cottage cheese in an airtight container in the refrigerator for up to a week.
