1. Prepare the Potatoes

Wash and scrub the russet potatoes thoroughly. Slice them thinly using a mandoline or a sharp knife, aiming for about 1/8-inch thick slices.

2. Soak the Slices

Place the potato slices in a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

3. Dry the Potatoes

After soaking, drain the potato slices and pat them dry with paper towels to remove moisture.

4. Heat the Oil

In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

5. Fry the Chips

Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry until golden brown and crispy, about 3-5 minutes.

6. Drain and Season

Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately sprinkle with sea salt, paprika, garlic powder, onion powder, and black pepper to taste.

7. Repeat

Repeat the frying process with the remaining potato slices until all chips are cooked.
