    Wash and scrub the russet potatoes thoroughly. Slice them thinly using a mandoline or a sharp knife, aiming for about 1/8-inch thick slices.

    Place the potato slices in a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    After soaking, drain the potato slices and pat them dry with paper towels to remove moisture.

    In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
