Sashimi Preparation

Slice the Fish

Using a sharp knife, slice the Big Eye Tuna, Salmon, and Japanese Hamachi into thin pieces, about 1/4 inch thick. Arrange the slices on a plate.

California Roll Preparation

Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix in rice vinegar, sugar, and salt. Allow it to cool.

Assemble the California Roll

Lay a sheet of nori on a bamboo mat. Spread a layer of sushi rice over the nori, leaving an inch at the top. In the center, layer crab meat, sliced avocado, and cucumber. Roll tightly, using the mat to help shape the roll. Slice into bite-sized pieces.

Arrange the sashimi and California rolls on a platter. Serve with soy sauce, wasabi, and pickled ginger on the side.
