Taquitos Dorados Recipe
Com tortillas rolled and filled with beef or chicken, deep fried. Served with guacamole, sour cream, queso fresco and pico de gallo.

Method
Filling

Cook aromatics
Heat 1 tablespoon vegetable oil in a skillet over medium heat. Add the finely chopped onion and sauté 3–4 minutes until translucent. Add the minced garlic and cook 30 seconds until fragrant.

Season filling
Add the shredded chicken or ground beef to the skillet. If using ground beef, cook until browned and fully cooked, breaking it up with a spoon (about 6–8 minutes). Stir in cumin, chili powder, salt and black pepper. Cook 1–2 minutes to bloom the spices.

Finish filling
Remove from heat. Stir in chopped cilantro and 1 tablespoon lime juice. Taste and adjust seasoning. Let cool slightly so the filling is easy to handle (about 5 minutes).
Tortillas & assembly

Warm the corn tortillas to make them pliable: wrap in a damp kitchen towel and microwave 30–45 seconds, or heat in a dry skillet 20 seconds per side. Keep them covered to stay soft.

Place about 2 tablespoons of the prepared filling near one edge of each tortilla. Roll the tortilla tightly around the filling to form a small cylinder (taquito). Secure each taquito with a toothpick through the seam if needed.

Fry the taquitos seam-side down first for 1.5–2 minutes, then turn to fry the other sides until evenly golden and crisp, about 3–4 minutes total per batch. Adjust heat to maintain oil temperature. Transfer to a paper towel–lined plate to drain. Remove toothpicks before serving.
Guacamole

Place sour cream in a small bowl. Crumble the queso fresco and put in a separate bowl (or sprinkle over taquitos when plating). No cooking required—bring to table with the taquitos for garnish and dipping.
Pico de gallo

Combine diced tomatoes, chopped white onion, cilantro, lime juice, salt and minced jalapeño in a small bowl. Stir gently, taste and adjust seasoning. Let sit 10–15 minutes to marry flavors before serving.
To serve

Arrange the hot taquitos on a platter. Serve immediately with bowls of guacamole, sour cream, crumbled queso fresco and pico de gallo on the side. Provide lime wedges if desired.
