Warm dairy and dissolve cocoa
In a medium saucepan over medium heat, combine the whole milk, heavy cream, granulated sugar, and unsweetened cocoa powder. Whisk constantly until sugar and cocoa are fully dissolved and the mixture is warm but not boiling (about 5 minutes).
Melt chocolate
Remove the pan from heat and add the semisweet chocolate (chopped). Let sit 1 minute, then whisk until fully melted and smooth. If necessary, return to very low heat briefly to finish melting, but do not boil.
Temper egg yolks
In a medium bowl, whisk the egg yolks lightly. Slowly pour about 1/2 cup of the hot chocolate mixture into the yolks while whisking constantly to temper them. Then slowly whisk the tempered yolks back into the saucepan with the remaining chocolate mixture.
Cook to custard consistency
Return the saucepan to low heat and cook, stirring constantly with a wooden spoon or silicone spatula, until the mixture thickens slightly and coats the back of the spoon (170–175°F / 77–80°C). Do not let it boil or scramble the eggs.
Strain and cool
Remove from heat and stir in the salt and vanilla extract. For an extra-smooth texture, pour the mixture through a fine-mesh sieve into a clean bowl to remove any cooked bits. Let cool at room temperature for 20–30 minutes, stirring occasionally to release heat.
Chill
Cover the bowl with plastic wrap directly on the custard surface or with a lid and refrigerate until completely cold, at least 3 hours or overnight. Chilling improves texture and helps freeze evenly.
Optional Mexican Spice & Freeze

If using cinnamon and ground chile (for a Mexican-style kick), whisk them into the chilled custard until fully incorporated. Taste and adjust: add a pinch more chile if you prefer more heat.
Freeze in ice cream maker
Pour the chilled chocolate custard into a prepared ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency (typically 20–30 minutes).
Finish and harden
Transfer the churned nieve de chocolate into a shallow, freezer-safe container, smoothing the top. Sprinkle dark chocolate shavings or chopped chocolate over the surface if desired, then press lightly to adhere. Cover tightly and freeze for at least 2–4 hours to firm up to scoopable texture.
