Warm and combine milks
In a medium saucepan, combine 2 cups whole milk and 1 cup heavy cream. Warm over medium-low heat until just steaming — do not boil — about 5 minutes, stirring occasionally to prevent a skin from forming.

Whisk 1 tablespoon granulated sugar, 1 teaspoon vanilla extract, 1/4 teaspoon ground cinnamon, and 1/4 teaspoon fine sea salt into the warm milk mixture. Taste and adjust the sweetness or salt to balance flavors. If using citrus zest, stir it in now.

Bloom gelatin
If you choose to use gelatin for a creamier, scoopable nieve, sprinkle 1 teaspoon powdered gelatin over 2 tablespoons cold water in a small bowl. Let it bloom 3 to 5 minutes until spongy.

Cover the mixture and refrigerate at least 3 hours, or until thoroughly chilled. For best texture chill overnight.

If you have an ice cream maker: churn the chilled mixture according to the manufacturer's instructions until it reaches a soft-serve consistency, about 20–30 minutes. In the last 5 minutes of churning fold in 1/4 cup toasted chopped nuts and 1/4 cup dried fruit if using.

If you do not have an ice cream maker: pour the chilled mixture into a shallow freezer-safe container. Freeze for 45 minutes, then remove and vigorously whisk or beat with a hand mixer to break up ice crystals. Return to freezer and repeat every 30–45 minutes for 3–4 cycles until smooth and scoopable. During the first or second beating fold in nuts and dried fruit.

Transfer the churned or hand-whipped nieve into a lidded container. Smooth the top, press a piece of plastic wrap directly onto the surface to prevent ice crystals, and freeze until firm, at least 2 hours.

Let the nieve sit at room temperature 5–10 minutes before scooping for easier serving. Serve in small bowls or cones, garnished with a few extra toasted nuts, a pinch of cinnamon, or a little citrus zest if desired.
