Burrito Filling

    Prepare aromatics

    Peel and finely dice the onion. Mince the garlic cloves so they are ready to add during cooking.

    Brown the beef

    Heat a large skillet over medium-high heat and add 1 tablespoon olive oil. Add the diced onion and cook 3–4 minutes until softened and translucent. Add the ground beef and break it up with a spoon. Cook 6–8 minutes until browned and no longer pink.

    Add garlic and spices

    Stir in the minced garlic and cook 30 seconds until fragrant. Add chili powder, ground cumin, smoked paprika, salt, and black pepper; cook 1 minute to bloom the spices.

    Simmer with tomatoes, beans and broth

    Stir in the drained diced tomatoes with chiles, tomato paste, and cooked beans. Pour in 1 cup of beef or chicken broth and bring to a gentle simmer. Reduce heat to medium-low and simmer uncovered 8–10 minutes until mixture thickens slightly. Taste and adjust seasoning (add more salt or chili powder if desired). Remove from heat and keep warm.

    Warm tortillas

    Warm each flour tortilla briefly in a dry skillet over medium heat (20–30 seconds per side) or wrap in a damp paper towel and microwave 20–30 seconds so they are pliable.

    Assemble burritos

    Lay a warm tortilla on a flat surface. Spoon about 3/4 cup of the beef-and-bean filling down the center of the tortilla. Top with a quarter cup each of shredded cheddar and Monterey Jack cheese, a couple tablespoons of sour cream, 2 tablespoons salsa, a small handful of shredded lettuce, and 2 tablespoons diced tomatoes. Sprinkle with a pinch of pickled jalapeños and some chopped cilantro. Squeeze a little lime juice over the filling if desired.

    Fold burrito

    Fold the bottom edge up over the filling, fold the two sides toward the center, then roll tightly from the bottom to enclose the filling. Place seam-side down on a plate.

    Optional—grill burrito for crisp exterior

    If you want a crisp, sealed burrito, heat 1 tablespoon butter or oil in a skillet over medium heat. Place seam-side down and cook 1–2 minutes per side until golden brown and crisp, gently pressing with a spatula.

    Slice burrito in half on the diagonal (optional) and serve immediately with extra salsa, sour cream, lime wedges, and hot sauce on the side.
