Prepare the Fries
Wash and peel the russet potatoes. Cut them into thin strips to create fries.

Fry the Potatoes
Heat the vegetable oil in a large pot or deep fryer over medium-high heat. Once the oil is hot, carefully add the potato strips in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Season the Fries
While the fries are still hot, season them with salt and black pepper to taste.

Prepare the Toppings
In a small bowl, mix the smoky chipotle pepper into the queso cheese sauce.

Assemble the Voodoo Fries
Place the hot fries on a serving platter. Drizzle the queso cheese sauce over them, followed by ranch dressing. Finish by sprinkling chopped green onions on top.
