Prepare the batter
In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined. In another bowl, mix the milk, eggs, and vanilla extract until smooth. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. The batter should be thick but pourable.
Heat the oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat to 350°F (175°C).
Fry the funnel cake fries
Using a piping bag or a squeeze bottle, carefully pipe the batter into the hot oil in long, thin strips, creating a crisscross pattern or straight lines as preferred. Fry for about 2-3 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.
Serve
Dust the fried dough sticks with powdered sugar while they are still warm. Serve immediately with chocolate sauce on the side for dipping if desired.
