Ingredients for Shrimp Scamp'aroni Sandwich

Method

Directions for Shrimp Scamp'aroni Sandwich

  1. 1

    Prepare the Mac Cheese

Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

  2. 2

    Make the Cheese Sauce

In a saucepan, melt 2 tablespoons of butter over medium heat. Add flour and whisk for 1 minute. Gradually stir in milk and cook until thickened. Add cheddar cheese, salt, black pepper, and paprika. Stir until smooth.

  3. 3

    Combine and Bake

Mix the cooked macaroni with the cheese sauce. Pour into a greased baking dish, sprinkle mozzarella cheese on top, and bake at 350°F (175°C) for 20 minutes until bubbly and golden.

  4. 4

    Cook the Shrimp

In a skillet, melt the remaining 2 tablespoons of butter over medium heat. Add minced garlic and cook until fragrant. Add shrimp, seasoning with salt and pepper, and cook until they turn pink and opaque.

  5. 5

    Assemble the Sandwiches

Slice the French bread rolls in half. Place a generous amount of mac cheese on the bottom half, top with garlic butter shrimp, and sprinkle with chopped parsley. Close the sandwiches and serve warm.
