Directions for Preparing The Fish Sandwich

Prepare the Batter
In a large bowl, mix together the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer or sparkling water until the batter is smooth and slightly thick.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off, and carefully place it into the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Assemble the Sandwich
Toast the sandwich rolls if desired. On the bottom half of each roll, layer the lettuce, fried fish fillet, cheese slice, sliced tomato, sliced onion, and a generous scoop of coleslaw. Drizzle with tartar sauce and top with the other half of the roll.

Serve
Serve the sandwiches while hot, with extra tartar sauce on the side if desired.
