    Prepare the Cherry Filling

    In a large mixing bowl, combine the pitted cherries, sugar, flour, lemon juice, cinnamon, and salt. Stir gently until the cherries are evenly coated. Let the mixture sit for about 15 minutes to allow the juices to develop.

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Assemble the Pie

    Roll out one pie crust and fit it into a 9-inch pie pan. Pour the cherry filling into the crust, and dot the filling with small pieces of butter. Roll out the second pie crust and place it over the filling. Seal the edges by crimping them together, and cut a few slits in the top crust to allow steam to escape.

    Place the pie in the preheated oven and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling. If the edges brown too quickly, cover them with foil.
