Preparation

    Cook the Macaroni

    Bring a pot of salted water to a boil and cook the macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in the milk, stirring constantly until the sauce thickens. Stir in the cheddar cheese until melted and smooth. Season with salt and black pepper.

    Combine Macaroni and Cheese Sauce

    Add the cooked macaroni to the cheese sauce and mix until well combined. Allow to cool for about 30 minutes.

    Shape the Bites

    Once cooled, form the macaroni and cheese mixture into small balls or bites. Place them on a parchment-lined baking sheet.

    Prepare for Frying

    Beat the eggs in a bowl. Place the breadcrumbs in another bowl. Dip each mac and cheese bite into the eggs, then coat with breadcrumbs.

    Fry the Bites

    Heat oil in a deep fryer or large pot over medium heat. Fry the bites in batches until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
