Preparing the Fries

Cutting the Potatoes
Peel the potatoes and cut them into long strips to form fries.

Cooking the Fries
Heat vegetable oil in a large pot or deep fryer to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt to taste.

In a bowl, combine mayonnaise, chopped pickles, lemon juice, capers, and dill. Mix well and refrigerate until serving.

Making the Batter
In a bowl, whisk together flour, baking powder, salt, and black pepper. Gradually add cold sparkling water until the batter is smooth.

Frying the Fish
Heat vegetable oil in a separate pot to 350°F (175°C). Dip the cod fillets into the batter, allowing any excess to drip off. Carefully place the battered fish into the hot oil and fry for 5-6 minutes or until golden brown and cooked through. Remove and drain on paper towels.
