Prepare the Slaw
In a large bowl, combine shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix well and let sit in the refrigerator for at least 30 minutes.

Make the Bang Bang Sauce
In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Set aside.

Prepare the Shrimp
In a shallow bowl, combine flour and cornstarch. In another bowl, place the beaten egg. In a third bowl, add the panko breadcrumbs. Dip each shrimp first into the flour mixture, then into the egg, and finally coat with panko breadcrumbs.

Fry the Shrimp
Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the breaded shrimp in batches, frying until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Assemble the Tacos
Warm the corn tortillas in a dry skillet. Place crispy shrimp on each tortilla, top with slaw, drizzle with Bang Bang sauce, and garnish with chopped green onions.
