    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and diced carrots, and sauté for about 5 minutes, or until the onions are translucent.

    Stir in the minced garlic and cook for an additional minute until fragrant.

    Combine Tomatoes and Broth

    Add the canned tomatoes (with their juices) and vegetable broth to the pot. Bring to a boil, then reduce the heat to a simmer.

    Simmer the Soup

    Let the soup simmer for 20 minutes, allowing the flavors to meld.

    Blend the Soup

    Use an immersion blender to puree the soup until smooth. If you do not have an immersion blender, carefully transfer the soup to a regular blender in batches.

    Stir in the heavy cream, salt, black pepper, and basil. Heat the soup gently over low heat until warmed through.
