    Prepare the Tempeh Bacon

    Slice the tempeh into thin strips. In a bowl, mix olive oil, smoked paprika, soy sauce, and maple syrup. Marinate the tempeh strips in this mixture for at least 15 minutes.

    Cook the Tempeh Bacon

    Heat a skillet over medium heat. Cook the marinated tempeh strips for about 5-7 minutes on each side until crispy. Remove from heat and set aside.

    Make the Fries

    Preheat the oven to 425°F (220°C). Cut the potatoes into fries, toss them with olive oil, salt, and pepper, and spread them on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

    Toast the Bread

    While the fries are baking, toast the slices of country loaf bread in a toaster or on a skillet until golden brown.

    Assemble the Sandwich

    Spread vegan mayonnaise on one side of each slice of toasted bread. Layer the tempeh bacon, tender greens, and oven-dried tomatoes on one slice. Top with another slice of bread, mayo side down.
