    Brine the Pork Chops

    In a mixing bowl, combine apple cider vinegar, brown sugar, salt, and black pepper. Stir until the sugar and salt dissolve. Add the pork chops and ensure they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Seasonal Fruit Mostarda

    Chop the seasonal fruits into bite-sized pieces. In a medium saucepan, heat olive oil over medium heat. Add the chopped fruits and cook for 5-7 minutes until they begin to soften. Stir in whole grain mustard and fresh thyme. Simmer for an additional 5 minutes. Remove from heat and set aside.

    Cook the Pork Chops

    Remove the pork chops from the brine and pat them dry with paper towels. Heat a skillet over medium-high heat and add a little olive oil. Once hot, add the pork chops and sear for 4-5 minutes on each side until they reach an internal temperature of 145°F (63°C). Remove from the skillet and let rest for 5 minutes.

    Serve the pork chops on a plate and top them with the cider-brined seasonal fruit mostarda. Enjoy!
