Steak Preparation

    Marinate the Steak

    In a bowl, mix olive oil, chopped rosemary, and thyme. Rub the mixture over the flat iron steaks and let it marinate for at least 30 minutes at room temperature.

    Grill the Steak

    Preheat your grill to high heat. Season the marinated steaks with flaky sea salt and black pepper. Grill for about 4-5 minutes on each side for medium rare, or until your desired doneness. Let rest for 5 minutes before slicing.

Frites Preparation

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips. Soak the strips in cold water for at least 30 minutes to remove excess starch.

    Fry the Frites

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the potatoes and dry them thoroughly with a towel. Fry in batches until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt.

    In a small bowl, combine mayonnaise, truffle oil, and lemon juice. Mix well and season with salt to taste.
