Prepare the Lamb

Season the Lamb
In a small bowl, mix together smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Rub this spice mixture all over the lamb shoulder.

Slow Cook the Lamb
Place the seasoned lamb shoulder in a smoker or slow cooker. Smoke at 225°F (107°C) for about 8-10 hours or until the internal temperature reaches 195°F (90°C) for tender, pull-apart meat.
Prepare the BBQ Sauce

Mix Ingredients
In a saucepan over medium heat, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper. Stir well and bring to a simmer. Cook for 15-20 minutes.
Assemble the Sandwich

Shred the Lamb
Once the lamb is cooked, remove it from the smoker or slow cooker and let it rest for 15 minutes. Shred the meat with two forks.

Build the Sandwich
Spread mayonnaise on both halves of the hamburger buns. Add a generous amount of shredded lamb, drizzle with BBQ sauce, and top with pickled pepperoncini and lettuce. Serve immediately.
