Method

Preparation of Pickled Shallots

    Pickle Shallots

    Slice the shallots thinly and place them in a jar. In a small saucepan, combine vinegar, sugar, and salt. Bring to a simmer until the sugar dissolves, then pour over shallots. Let sit for at least 30 minutes.

Cooking Brussels Sprouts

    Fry Brussels Sprouts

    Trim and halve the Brussels sprouts. Heat olive oil in a skillet over medium-high heat. Add Brussels sprouts, season with salt and pepper, and fry until golden and crispy, about 8-10 minutes.

Making Hummus

    Blend Hummus

    In a food processor, combine chickpeas, tahini, garlic, lemon juice, olive oil, and salt. Blend until smooth, adding water as needed for desired consistency.

Preparing Pomegranate Molasses

    Make Pomegranate Molasses

    In a saucepan, combine pomegranate juice and sugar. Simmer over medium heat until reduced and thickened, about 20 minutes. Let cool.

Toasting Nuts

    In a dry skillet over medium heat, toast sliced almonds and sesame seeds until golden and fragrant, about 5 minutes. Stir frequently to prevent burning.

Making Minted Yogurt

    Prepare Minted Yogurt

    In a bowl, mix coconut yogurt with finely chopped mint leaves and honey or agave syrup. Stir well to combine.
