Preparation

Prepare the Brussels Sprouts
Trim the stems of the Brussels sprouts and cut them in half. Rinse under cold water and pat dry.

Prepare the Minted Coconut Yogurt
In a bowl, mix the coconut yogurt with finely chopped fresh mint leaves. Set aside.

Heat the Oil
In a large skillet, heat the olive oil over medium-high heat.

Fry the Brussels Sprouts
Add the Brussels sprouts to the skillet, cut side down. Season with salt and black pepper. Fry for about 5-7 minutes until they are golden brown and tender.

Assembly
Remove the Brussels sprouts from the skillet and place them on a serving plate. Drizzle with pomegranate molasses, and dollop with hummus. Sprinkle toasted almonds and sesame seeds on top.

Finish with Pickled Shallots
Add pickled shallots on top of the Brussels sprouts and serve with minted coconut yogurt on the side.
