Pasta Preparation

    Cook the Bucatini

    In a large pot of salted boiling water, cook the bucatini according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Cook the Pancetta

    In a large skillet, heat olive oil over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes.

    Add Spinach and Season

    Add the garlic cloves (minced) and sauté for 1 minute. Then, stir in the spinach, lemon juice, and chili flakes. Cook until the spinach is wilted.

    Combine Pasta and Sauce

    Add the drained bucatini to the skillet, tossing everything together. If the pasta seems dry, add reserved pasta water as needed.

    Make the Crumb

    In a separate pan, toast the breadcrumbs over medium heat until golden brown. Stir in parsley, garlic powder, salt, and pepper. Cook for another minute, then remove from heat.

    Serve the bucatini topped with the garlic-herb crumb and freshly grated Pecorino Romano cheese.
