Pasta Preparation

Cook the Bucatini
In a large pot of salted boiling water, cook the bucatini according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Cook the Pancetta
In a large skillet, heat olive oil over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes.

Add Spinach and Season
Add the garlic cloves (minced) and sauté for 1 minute. Then, stir in the spinach, lemon juice, and chili flakes. Cook until the spinach is wilted.

Combine Pasta and Sauce
Add the drained bucatini to the skillet, tossing everything together. If the pasta seems dry, add reserved pasta water as needed.
