Prepare the Pork Ribeye
Remove the pork ribeye from the refrigerator and let it sit at room temperature for 30 minutes before cooking.

Pan Sear the Pork
Heat a skillet over medium-high heat. Once hot, add the pork ribeye. Sear for about 4-5 minutes on each side until a golden-brown crust forms.

Roast the Pork
Transfer the skillet to a preheated oven at 400°F (200°C) and roast for an additional 10-15 minutes, or until the internal temperature reaches 145°F (63°C).

Rest the Pork
Remove from the oven and let the pork ribeye rest for 5 minutes before slicing.
Yukon Gold Mashed Potatoes

Prepare the Potatoes
Peel and chop the Yukon Gold potatoes into even-sized pieces.

Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.
Sauteed French Green Beans

Prepare the Green Beans
Trim the ends of the French green beans.

Add the French green beans to the skillet. Season with salt and black pepper. Sauté for 5-7 minutes until tender-crisp.
