For the Bourbon Glaze

Prepare the glaze
In a small saucepan, combine the bourbon, brown sugar, soy sauce, Dijon mustard, minced garlic, black pepper, and salt. Bring to a simmer over medium heat, stirring until the sugar is dissolved. Reduce the heat to low and let the glaze simmer for about 10-15 minutes until it thickens slightly.

Prepare the salmon
Preheat your grill or grill pan over medium-high heat. Brush the salmon fillets with olive oil and season with salt and black pepper. Once the grill is hot, place the salmon skin-side down and grill for 4-5 minutes. Carefully flip the salmon, and brush the glaze on the cooked side. Grill for an additional 4-5 minutes until the salmon is cooked through and flakes easily with a fork.
For the Sautéed Broccolini

Sauté the broccolini
While the salmon is grilling, heat a large skillet over medium heat. Add the broccolini and sauté for about 3-4 minutes until tender but still bright green. Drizzle with truffle oil, sprinkle with salt, black pepper, and top with grated parmesan cheese. Toss to combine and remove from heat.
