Heat Oil
In a large skillet, heat the olive oil over medium-high heat.

Sauté Beef
Add the sliced beef sirloin to the skillet, season with salt and black pepper, and sauté for about 3-4 minutes until browned.

Cheese Sauce Preparation

Add Milk
Gradually whisk in the milk, continuing to whisk until the mixture thickens (about 3-5 minutes).

Add Cheese
Remove from heat and stir in the shredded Swiss cheese and Monterey jack cheese until fully melted and smooth.
Assembling the Beef Philly

Toast Buns
Preheat your oven to 375°F (190°C). Place the hoagie buns on a baking sheet and toast in the oven for about 5 minutes until lightly crisp.

Combine and Serve
Spoon the sautéed beef and vegetable mixture into each toasted hoagie bun, then drizzle generously with the cheese sauce. Serve immediately.
