    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to form fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain and pat dry the soaked fries. Fry them in batches in the hot oil until they are golden and crispy, about 4-5 minutes per batch.

    Drain and Season

    Remove the fries from the oil and drain on paper towels. While they are still hot, sprinkle with salt.

    Add Truffle Oil and Garnish

    Drizzle truffle oil over the fries and toss to coat. Top with grated Parmesan cheese and chopped parsley before serving.
