Prepare the Flatbread
Preheat your oven to 475°F (245°C). Roll out the dough on a floured surface into a thin rectangle or circle.

Make the Roasted Garlic Cream Sauce
In a separate bowl, mix together the roasted garlic and cream cheese until smooth. Spread this mixture evenly over the flatbread.

Prepare the Cheeses and Mushrooms
In a bowl, combine the mozzarella, parmesan, fontina, and gorgonzola cheeses. Evenly distribute the cheese mixture over the roasted garlic cream sauce. Sauté the wild mushrooms in a little olive oil over medium heat for about 5 minutes until tender, then sprinkle them over the cheese.

Bake the Flatbread
Place the flatbread in the preheated oven and bake for 12-15 minutes, or until the edges are golden and the cheese is bubbly.

Finish and Serve
Remove the flatbread from the oven and top with homemade pickled red onions. Slice and serve warm.
