Make the Whiskey Glaze
In a small saucepan, combine whiskey, honey, soy sauce, and bring to a boil. Reduce heat and let simmer until thickened, about 5-7 minutes. Set aside.

Sear the Salmon
Season the salmon fillets with salt and black pepper. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the salmon skin-side down and cook for about 4-5 minutes on each side until golden and cooked through. Brush the whiskey glaze over the salmon during the last minute of cooking.

Sauté the Mushrooms and Peas
In the same skillet, add the remaining tablespoon of butter. Add sliced mushrooms and sauté for 3-4 minutes until golden brown. Add garden peas and cook for an additional 2-3 minutes. Season with salt and pepper.

Prepare the Mustard Cream
In a small bowl, whisk together heavy cream and Dijon mustard. Season with salt and pepper to taste.
