Frying the Fish

Prepare the Batter
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, pepper, and cold beer until smooth.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Batter and Fry
Dip each Walleye fillet into the batter, allowing excess to drip off, then carefully place it in the hot oil. Fry until golden brown and cooked through, about 4-5 minutes. Remove and drain on paper towels.
Making the Chips

Prepare the Potatoes
Soak the cut potatoes in cold water for 30 minutes, then drain and pat dry.

Heat the Oil
In a separate pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Chips
Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Mix the Ingredients
In a large bowl, combine the shredded cabbage, carrots, and red onion. In a separate bowl, mix together the mayonnaise, apple cider vinegar, sugar, salt, and pepper. Pour the dressing over the slaw and toss to combine.
Making the Tartar Sauce

In a small bowl, mix together the mayonnaise, dill pickles, capers, lemon juice, salt, and pepper until well combined.
