    Prepare the Ingredients

    Gather all the ingredients and ensure the corned beef is sliced and the sauerkraut is drained.

    Assemble the Sandwich

    On two slices of caraway rye bread, layer 4 oz of corned beef, 2 slices of Swiss cheese, and 1/2 cup of sauerkraut. Drizzle with 2 tbsp of Thousand Island dressing. Top with another slice of rye bread.

    Toast the Sandwich

    In a skillet over medium heat, melt 1 tbsp of butter. Place the sandwich in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Add the remaining butter to the skillet for the second side.

    Serve

    Remove the sandwich from the skillet, cut in half, and serve with extra Thousand Island dressing on the side.
