    Prepare the Pot Roast

    In a large Dutch oven, heat olive oil over medium-high heat. Season the beef chuck roast with salt and black pepper. Sear the roast on all sides until browned. Remove the roast and set aside.

    In the same pot, add chopped onion, sliced carrots, and minced garlic. Sauté for about 5 minutes until the onion is translucent.

    Braise the Roast

    Return the beef to the pot, add beef broth and bay leaves. Bring to a simmer, cover, and reduce heat to low. Cook for 3-4 hours, or until the meat is tender and easily shreds.

    Remove the beef from the pot and let it cool slightly. Shred the beef using two forks, discarding any large pieces of fat.
