Prepare the Pot Roast
In a large Dutch oven, heat olive oil over medium-high heat. Season the beef chuck roast with salt and black pepper. Sear the roast on all sides until browned. Remove the roast and set aside.

Braise the Roast
Return the beef to the pot, add beef broth and bay leaves. Bring to a simmer, cover, and reduce heat to low. Cook for 3-4 hours, or until the meat is tender and easily shreds.

Assemble the Sandwich
Slice the ciabatta rolls in half. Spread horseradish sauce on both sides of the roll. Layer shredded beef, Havarti cheese, and pickled vegetables inside the roll.

Toast the Sandwich
Place the assembled sandwiches on a grill or in a panini press. Toast until the cheese is melted and the bread is crispy, about 3-5 minutes.
