Cooking Instructions

  1. 1

    Prepare the Ingredients

Chop the breakfast potatoes, bell peppers, and onion into bite-sized pieces. Slice the bacon and pickled Fresno peppers.

  2. 2

    Cook the Bacon

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the bacon slices and cook until crispy. Remove and set aside.

  3. 3

    Cook the Bangers

In the same skillet, add the Irish bangers and cook until browned and cooked through, about 8-10 minutes. Remove and set aside.

  4. 4

    Sauté the Vegetables

Add the remaining tablespoon of olive oil to the skillet. Add the chopped potatoes, bell peppers, and onion. Season with salt and black pepper. Cook until the potatoes are tender and golden, about 10-12 minutes.

  5. 5

    Scramble the Eggs

In a bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the skillet with the vegetables and cook, stirring gently, until scrambled and fluffy.

  6. 6

    Combine and Serve

Add the cooked bacon and bangers back to the skillet. Gently mix everything together. Drizzle with hollandaise sauce and hot sauce to taste, then top with pickled Fresno peppers before serving.
