Cooking Instructions

  1. 1

    Prepare the Ingredients

Peel and cut the potatoes into chunks. Finely chop the onion.

  2. 2

    Cook the Sausages

In a large skillet over medium heat, add the Irish sausages. Cook for about 10-12 minutes, turning occasionally until browned and cooked through.

  3. 3

    Sauté the Onion

Remove the sausages from the skillet and set aside. In the same skillet, add the butter and chopped onion. Sauté for 3-4 minutes until the onion is translucent.

  4. 4

    Cook the Potatoes

Add the potato chunks to the skillet with the onions. Pour in the broth, and season with salt and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for about 15-20 minutes, or until the potatoes are tender.

  5. 5

    Combine and Serve

Return the sausages to the skillet, stir gently to combine, and cook for an additional 5 minutes. Garnish with fresh parsley before serving.
