Method

Omelet Preparation

  1. 1

    Prepare the Ingredients

Chop the spinach, broccoli, sweet bell peppers, onions, mushrooms, and tomatoes. Set aside.

  2. 2

    Beat the Eggs

In a bowl, whisk together the eggs, salt, and black pepper until well combined.

  3. 3

    Cook the Vegetables

In a non-stick skillet, heat the olive oil or butter over medium heat. Add the onions, peppers, and mushrooms. Sauté for about 2-3 minutes until softened. Then add the broccoli and spinach, and cook for an additional 2 minutes.

  4. 4

    Combine and Cook the Omelet

Pour the egg mixture over the sautéed vegetables. Cook on medium-low heat until the edges begin to set, about 3-4 minutes. Sprinkle the diced tomatoes and shredded Irish cheddar cheese on top.

  5. 5

    Finish Cooking

Carefully fold the omelet in half and let it cook for another minute, allowing the cheese to melt. Slide the omelet onto a plate.
